Before playing in the NHL, Grebenkin played parts of three seasons with Metallurg Magnitogorsk and one season with Amur Khabarovsk of the Kontinental Hockey League (KHL). They went on to defeat and sweep Lokomotiv Yaroslavl four games to zero in the Final to win the Gagarin Cup. He was also named the Rookie of the Year.

He was drafted 135th overall by the Toronto Maple Leafs in the 2022 NHL entry draft. On 29 April 2024, Grebenkin signed a three-year entry-level contract to join the Maple Leafs. He was sent down to play for their AHL-affiliate Toronto Marlies.

On 20 November 2024, the Leafs called him up and Grebenkin made his NHL debut in a 3–0 win against the Vegas Golden Knights. On 11 October 2025, he recorded his first NHL point after assisting on a Bobby Brink goal in a 4–3 overtime loss against the Carolina Hurricanes. On 4 November, Grebenkin scored his first NHL goal against Sam Montembeault in a 5–4 shootout win against the Montreal Canadiens.

On 7 March 2025, the Leafs traded Grebenkin along with a 2027 conditional first-round draft pick to the Philadelphia Flyers in exchange for Scott Laughton, a 2025 fourth-round draft pick, and a 2027 sixth-round draft pick.
